Jelly Thumbprint Cookies
Ingredients:
- 1 Cup of unsalted butter (Room temperature)
- 2/3 Cup of powdered sugar
- 2 large egg yolks
- 2 teaspoons of vanilla extract
- 2 pinches of fine salt
- 2 1/4 Cups of AP flour
- 1 tsp of Fruit jam per cookie
- Granulated sugar for rolling cookies
Steps:
- Preheat oven to 325F
- Cream powdered sugar and butter together
- Add egg yolks, vanilla and salt
- Slowly add in flour +- tbsp of flour depending on consistency, if too dry and cracks add in a little bit of egg whites.
- Knead dough by hand and use tablespoon to shape cookies for consistency
- Roll cookies with hands and roll over sugar
- Place cookies on nonstick pan
- Use end of thermometer, wooden spoon of thumb to press down on cookie to make dome shape
- Use 1 teaspoon to add in jam.
- Bake for 15- 17 minutes until bottoms of cookies are golden brown.
