Jelly Thumbprint Cookies

Ingredients:

  • 1 Cup of unsalted butter (Room temperature)
  • 2/3 Cup of powdered sugar
  • 2 large egg yolks
  • 2 teaspoons of vanilla extract
  • 2 pinches of fine salt
  • 2 1/4 Cups of AP flour
  • 1 tsp of Fruit jam per cookie
  • Granulated sugar for rolling cookies

Steps:

  1. Preheat oven to 325F
  2. Cream powdered sugar and butter together
  3. Add egg yolks, vanilla and salt
  4. Slowly add in flour +- tbsp of flour depending on consistency, if too dry and cracks add in a little bit of egg whites.
  5. Knead dough by hand and use tablespoon to shape cookies for consistency
  6. Roll cookies with hands and roll over sugar
  7. Place cookies on nonstick pan
  8. Use end of thermometer, wooden spoon of thumb to press down on cookie to make dome shape
  9. Use 1 teaspoon to add in jam.
  10. Bake for 15- 17 minutes until bottoms of cookies are golden brown.
